Recipies:-

URAD DAL KACHORI:-

Ingredients:-200 gm white urad dal,

500 gm wheat flour,

100 gm aniseed (saunf)power. ,

50 gm corinder power,

1tsp chill powersalt to taste ,

250 ml oil

. METHOD:-Make a dought of wheat flour and mix sdme oil and salt in the dough. Keep aside. Soak urad dal for 4 hours. Drain and use only dal.The dal should be ground very coarse, even a few big grains of dal left can be used. Araemove and keep aside.Mix all the ingredients in urad dal pethi (paste). Make small balls of wheat flour dough.,roll it and stuff it with urad dal paste .Again make a ball and roll it. Heat oil in a pan. Reduce the flame.Fry the stuffed kachoris till they are golden brown. Serve hot with pickle and curd.

SHAHI URAD DAL:-

Ingredient:-

200gm urad white dal,

6-8 pieces kesar (saffron),

50 gm badam (almonds),

50gm raisins salt to taste,

4-5 red chillies ,

1/2 tsp chill power,

1cup onion(cubed),

1tsp ginger (crushed)2tbsp desi ghee.

METHOD:- Soak urad dal for about 30 minutes. Dissolve the kesar and colouring in water. Heat water in a cooker. Put the urad dal inot it and add salt ,kesar and leave the cooker on high flame.Cok till the dal is done. Keep aside . Heat ginger and onion till they are golden Brown .Add badam and raisin. Add the chilli power and fry . Keep aside .Transfer urad dal into a service bowl and add fried onion ,badam,ginger,red chillies and desi ghee.Then mix together.Garnish with grated badam and raisins and serve with tandoori roti or green chutney. Urad dal should be dry.
